Monster Cookies bring back such fun memories. My husband (boyfriend at the time) and I would go to Canada each June and go fishing for a week. My Mother-in-law (boyfriend’s mother at the time) would bake us a huge batch of monster cookies before we would head to the wilds of Canada to go fishing for the week. We were definitely out in the middle of nowhere when we went fishing and often times these cookies would double as a meal. One year a mink (ermine?) tried to steal our fish basket! We saw moose as well. It is amazing how MASSIVE a moose truly is in the wild.
We would rely on catching our meals and if the luck was not good, these cookies did the trick! I haven’t had them in years and they make gorgeous huge cookies. I thought I would include the recipe for anyone else that wanted to start some fun memories with these bad boys. This recipe is straight from my Mother-in-law, so shhhhhh! don’t tell her I told you!
1lb brown sugar
2 cups white sugar
1/2 TBS. vanilla
1/2 TBS corn syrup
4 tsp. baking soda
1/2 lb. butter
1 1/2 lbs peanut butter
9 cups of oatmeal (see it is practically health food!)
1/2lb. choc. chips
1/2 lb. M&M’s
Preheat oven to 350 degrees. Mix in BIG bowl in the order given. Drop by large tablespoons and flatten. Bake for 12 minutes. Do not overbake! There is NO flour in this recipe. We make bigger cookies as you can see from the picture. They should be a bit gooey. Nothing is worse than an overbaked cookie!
You can experiment with this recipe too. You could add coconut, raisins, cranberries, less chocolate chips, white chocolate chips, whatever you would like! It is really a kitchen sink kind of cookie….where everything but the kitchen sink can go in them!
My husband is a great baker and he made these, but I was the officially test taster and they were marvelous!
